Similar to meat, eggs must be handled with careful attention. Right before their use, eggs must be washed in running water and preferably wiped dry.
Contrary to bodybuilding routines and Rocky movie scenes, consuming raw eggs is not recommended because – as confirmed already in the second half of the past century – avidin (a protein of raw egg whites quickly decomposed by heat treatment) prevents the absorption of biotin (which is a part of the B vitamin family). According to test measurements, each raw egg is able to bind 23–25 mcg biotin. Therefore, the regular consumption of large quantities of raw eggs is not recommended at all.
